This knife is made from CrMoV steel, the same high carbon steel u will find on Wuthstof knives that cost 3 times more. Im an amature cook, and this knife is an excellent deal! few complaints: 1. the blade is thick! I have used kershaw shun, wuthstof grand prix, and henckel professional knives before, and anolon's blade is almost twice as thick as other brands. when u cut through dense root vegitables such as yam, beet and etc, this knife requires extra pressure to cut since the blade is so thick. 2. i found the "mirror finish" useless. this finish will give a nice satin look, but the moment u start to re-align ur knife, the steel will scratch this "shiny" finish and destroy the mirror finish. bottom line, the high priced german and japanese knives are little bit easier to use, but if u r just a semi-professional home cook, this knife is excellent for you.
