The secrets to really good steak on the grill are high heat and do not disturb the meat while it cooks. But, gas grills are notorious for hot spots and flare ups. This pan eliminates both. I put the pan on a hot grill, heat it for 5min and add my steaks. The tilted design of the pan carries all the grease to the sides of the pan where it absolutely cannot flare up and the vents allow smoke and flavor to permeate the meat. I rotate the entire pan every 3 or 4 minutes to make sure all the meat cooks evenly. The only time I touch it is to flip the steaks half way through their cooking time. The non-stick surface is great and clean-up is easy. I would give up every other pan and utensil I own before this pan. I make steak better than any restaurant.
