They feature a scalloped granton edge and have more ‘roll' in the end of the blade than a regular Santoku, allowing them to be used with both the rocking/sawing motion of a Chef's knife, and the chopper work of a Santoku. The Füri RR 7" East/West Coppertial Knife is intentionally light and comes with all the world-acclaimed Füri-pro features: hygiene, durability, comfort, and sharpen-ability. Rachael says "I love the sharpness and scalloped edge of a Santoku blade- its the best blade available for slicing through a tomato. However, a traditional Santoku knife has a very straight edge, which makes it difficult to se in a rocking & sliding motion, as with most traditional chef's knives. It has unique scalloped edge and Coppertail handle. With no handle gaps or joins, there's nowhere for germs to hide, making F??ri Pro one of the easiest knives to keep clean.A solid copper plug is fused into the end of the handle for easy rebalancing, i.e. as the blade wears and becomes lighter over time, copper is filed from the tails to rebalance the knife. The handle wedges into the hand, requiring less 'squeeze' to perform repetitive cutting tasks, resulting in less fatigue and hand strain than conventional handles. F??ri Pro is durable because there are no wood, plastic, rivets or separate pieces that can deteriorate over time.
Product Reviews I finally have used it long enough to compare it with my Wusthof Classic Santoku. Both have the same weight of about 7 ounces. The Furi has about 1/2" of more height at the blade next to the handle, close to the same blade thickness yet it feels to be lighter & is alot more comfortable to use due to the handle design. Then the big plus is the tip of the knife has a curved tip as on a Chef's knife; but needs more frequent sharpening. I rated the Wusthof 5 stars due to the high quality & German steel & the great look of the classic design. In my opinion, the German steel in a Wusthof is a higher quality steel. Furi states it is made out of a softer German steel but on the knife package it states, "Made in China." To the best of my knowledge; Rachel Ray is presently using the Gusto Grip Furi santoku which has the bright orange silicone grip on the handle & it's around $10.00 cheaper. Only time will tell which Santoku is my favorite of these two. The Furi is #1 in balance and being very comfortable to use! But then the Classic Wusthof is a better fit for those with smaller hands. If you can, try picking up a Wusthof Classic, a Wusthof Grand Prix, & the Furi which should help one to decide which one you prefer. If the blade on the Wusthof was the exact same shape as the Furi; it would weigh more than just 7 ounces. This may be due to the Wusthof having a full tang construction. In my opinion, they are a lifetime investment! Now I wonder how comfortable the newer Furi Gusto Grip santoku is? UPDATE: I prefer to use the Furi over the Wusthof due to the handle, curved tip, & balance. But the Wusthof has alot better steel in the blade & stays razor sharp alot longer.
