Henckels Pro S 8-inch chef's Knife features a high-carbon stainless-steel blade factory honed to a fine edge. The eight-inch blade length is the most popular length for a chef s knife for two reasons: it affords enough length to chop lots of greens or veggies without getting buried, but is still short enough to afford maximum control. Blade, bolster and tang are forged of one solid piece of steel for maximum durability. I took the knife out of the box, and went ahead to try a tomato. I was amazed to find that it has a hard time with it. Checked my 3 year old never sharpened Mighty Mac (mind you it's a stamped knife and not forged), and without any issue it sliced right through it, so did my cheap Arcos knifes. For over a hundred dollars... What a disappointment, this one is going back promptly, and I'm gonna check out the equivalent Wusthof (and test their claim to fame, and no I'm not a fan). If this was my first PRO knife i might have been excited, but I know you can do a lot better for your money
