Product Description
Made from commercial heavy weight aluminized steel, the Chicago Metallic Commercial 2-Piece Perforated Pie Pan Set features small perforated holes on the floor of the pan, designed to help alleviate a soppy bottom layer crust by allowing steam and moisture to escape while baking. The second pan is designed to work like pie weights, beans, or a pie chain by sandwiching the crust between the two pans. Even heat distribution allows for even cooking and browning. All Chicago Metallic Commercial Line bakeware is made for durability - the pans won't rust or corrode and metal utensils can be used on their uncoated surfaces. The reinforced lip (on all folded and rectangular pans) eliminates popping, bending and flexing. The folded construction (on rectangular, loaf and square pans) is triple thick in the corners to increase strength and resist warping. Chicago Metallic Commercial bakeware is the choice of commercial bakers. The more you use it the better it gets. Dishwasher safe. 25 year limited warranty. Dimensions: 9" diameter x 1.25"

I'm a 60+ cook who could never figure out how to avoid that soggy bottom crust ... well folks .... here is the way. The perforated pan, of a heavy and solid feel, gives you that flaky (that part is up to you), beautifully colored crust that will not go soggy on you the first 10 minutes out of the oven. So far, in replacing that battered first set of baking & cooking equipment, I have found everything Chicago Metallic puts out to be of superior quality. I recommend without qualification.
