Product Description
The all-purpose carbon steel cleaver is perfect for cutting vegetables, meats, poultry, and fish. 4 inch wooden handle. Available in 4 sizes (the smaller the number the larger the cleaver). Excellent value!
Product Reviews First of All, I did NOT expect this to be more than what was advertised. I bought it as an experiment in bladecraft to make a slicing Chinese Cleaver for vegetable board work. There are four standard sizes of Kongmoon cleavers. The Kongmoon is the standard of the Chinese kitchens, usually with an integral metal handle. As shipped, the tapered blade was sanded, but showed the forming blows. The edge was very thick and rough, and the back of the blade was almost 3/16 inch thick with a very slight taper from ferrule to tip. The size of the blade was perfect at 8 1/8 inches by 3 3/4 inches. It is a heavy chopping implement and the back of the blade probably could tenderize coconuts as well as beef. The belly (front to back) curve of the blade was pleasant as shipped. The wooden handle was not very well finished and attached to the blade via a thin metal ferrule. I reshaped (thinned) the sectional edge profile with a Lansky sharpener fixture set at 34 deg (17 + 17 deg) and the edge was unstable, bending sideways with fingernail pressure; likewise at 40 deg. It stabilized at 50 deg, double-beveled, but the edge rolled with the first use. The wooden handle was staked by bending the tang sideways after it passed thru the grip. This cleaver might not pass Health Dept inspection in a Commercial Kitchen because of the crevices in the metal ferrule. It appears to be a low or mid carbon steel, and not hardened, as it formed a rolled burr on the edge when sharpened: I think a fine stone on this blade is a waste of time and effort for my purposes. Ahh, if only the Chinese Manufacturer had used a higher grade of steel, this would have been a wonderful base for a PROJECT Vegetable Cleaver. Hmmm, I wonder if I could graft on a high-strength edge with braze or a TIG weld?? Then, I would thin the back... Be advised to not put it into a dishwasher, and wash and dry it well immediately after use as it is not stainless steel. It will discolor with use, and will rust if you leave it wet. Store it with an Edge Guard in place. The Seller was extremely courteous and communicative and the shipping was via Priority Mail, arriving in only TWO DAYS !!!
